Spring’s Bright Gems | Celebrate Asparagus Season with Style & Flavor

Hi friends, it’s Megan K. & asparagus season is in full swing! Whether you fancy green, white, purple—or love them all—I’ve got everything you need to know to make the most of this vibrant veggie.

Spring is in the air, and with it comes one of my absolute favorite culinary joys: asparagus season! Whether you’re strolling through your local farmers’ market or eyeing the vibrant bundles in the produce aisle, there’s no mistaking the moment—tender spears of green, white, and even purple asparagus are popping up everywhere. Each variety brings its own unique charm to the table, and today, I’m diving into everything you need to know to enjoy this seasonal superstar.

The Colorful World of Asparagus | Green, White & Purple

Green asparagus is the most common and widely loved variety, known for its slightly grassy, earthy flavor. It’s rich in chlorophyll, which gives it that vibrant hue—and a nutrient boost to match.

White asparagus is the same plant as green, but grown under soil or covered to block sunlight. This technique prevents chlorophyll from developing, resulting in a milder, more delicate flavor and a tender bite. It’s a springtime delicacy in many European countries, especially Germany and France.

Purple asparagus is the showstopper of the bunch. With its deep violet color (thanks to anthocyanins—powerful antioxidants), this variety tends to be sweeter and nuttier. Bonus: it adds a stunning pop of color to your dishes.

Reasons to Crush on Asparagus

Aside from being delicious, asparagus is a nutritional powerhouse. Here’s what makes it such a smart seasonal pick:

  • High in Fiber — Great for digestion & keeping you full longer.

  • Packed with folate — Essential for cell growth & particularly important during pregnancy.

  • Rich in Vitamins A, C, E &  K — These support everything from skin health to your immune system.

  • Loaded with Antioxidants — Especially in the purple variety, which help fight oxidative stress.

  • Natural Diuretic — Helps flush excess salt & fluid from your body—hello, natural detox!

The Spear-it of the Season | Wonderful Ways to Enjoy Asparagus

Asparagus is as versatile as it is beautiful. Whether you’re looking for a simple side or a show-stopping main, here are a few ways I love to use it:

Roasted with Olive Oil & Lemon Zest

A classic. Toss your spears with a good glug of olive oil, sea salt, and lemon zest. Roast at 425°F for 15 minutes until lightly crisped. Finish with a squeeze of fresh lemon juice and a sprinkle of Parmesan if you’re feeling fancy.

Grilled with Balsamic Glaze

Perfect for outdoor meals. Grill asparagus until just tender, then drizzle with a balsamic reduction. Add crumbled goat cheese for an extra layer of flavor.

Shaved in Spring Salads

Shave raw green or purple asparagus with a vegetable peeler and toss with arugula, thin-sliced radishes, and a light vinaigrette. So fresh, so satisfying. Or heated green and white asparagus with loads of hearts and feta cheese for a delightful spring salad!

White Asparagus with Hollandaise

When white asparagus is in season, it’s worth the extra prep. Peel the stalks, gently steam until tender, and serve with a buttery hollandaise sauce. Add a poached egg on top for an elevated brunch moment.

Asparagus Soup

Blend steamed asparagus with sautéed onions, garlic, veggie broth, and a splash of cream or coconut milk. It’s simple, silky, and cozy—especially on those still-chilly spring evenings.

A Quick Storage Tip

To keep your asparagus fresher, longer: stand the spears upright in a jar with an inch of water, cover loosely with a plastic bag, and refrigerate. Treat them like a bouquet—and they’ll reward you with extra days of crispness.

Tying It All Together with a Tender Spear

Asparagus season is fleeting, which makes it all the more special. Whether you’re going green, white, or purple… or all three, now’s the time to get creative in the kitchen. Happy cooking—and happy spring!
